Cake Rhubarb

I love rhubarb – the colour the smell – we lived in a house a few years ago where they had the most ENORMOUSE and GORGEOUS rhubarb plant / bush? thing anyway – every year now I think oh maybe I’ll grow one – but they do take up a LOT of space… well I haven’t done it yet maybe one year…

I followed this recipe I have to say it was seriously good – I did alter the topping bit as it was the wrong ratio for me – so I did 25g butter and 4tbsp flour – the rest I left as it was – but I also did double (for clarity double topping not double cake mix) as I didn’t feel there was enough – so 50g butter 8 tbsp of SRF and so on…

I hardly managed to get it out of the dish before the peeps arrived going oh cake… nom.

So aside – I seriously think you could do this recipe with pretty much any fruit – I’m going to try some different ones as well – please feel free to comment below if you have tried any.

You could do in bars or like muffins so all ready to go rather than cake style – need cutting.

I bought my rhubarb from the supermarket 🙁 – I so miss having a fab fruit and veg shop just next to me – mind you I am so out of the habit of going maybe I wouldn’t go anyway… this is a really sad thought ummmm – any way another post I think…

UPDATE – 24/05/20 – I just found out a neighbour of mine grows one and has an abundance so guess what… (oh and she has chickens with her own eggs) whop whop
